I look at pesto as a free for all - whatever green stuff I find at the Market is going in the Vitamix with some nuts and hard cheese. For this batch, the Market ingredients included garlic scapes, kale, cilantro, fenugreek, curry roasted cashews from the Wedge Pop-up Market, Shepherd's Way Friesago cheese and cold milled flax from Ellie's Whole Grains. From the cupboard I added olive oil, toasted sesame oil, curry power, turmeric, pepper, sea salt and lime juice.
Starting the week with a huge bowl of this stuff is an easy way to pump up vitamins, fiber, protein and other nutrients in your diet. Use it as a sandwich or cracker spread, mix in with scrambled eggs, toss with pasta, top off a baked potato, or give raw veggies a dip. Really - anything that sounds good! :)
