One of my favorite new products at the Market this year are the Ginger Lime Carrots from Peg and John Brossart of Artisan MN. In addition to the carrots, they offer a line of Krauts, DIY Fermentation Kits and Kraut Krisps. They make it easy to get a daily dose of probiotics, the live bacteria and yeasts necessary for a healthy digestive system.
I have been experimenting with their DIY Fermentation Kit.
The process couldn't be easier. Put shredded cabbage and salt in a large bowl and man handle it until it breaks down and releases it's natural juices. Next, pack it in the jar and add enough salt water to cover the top of the product. Store it in a cool, dark place and check it weekly until it reaches the potency you desire.
I used red cabbage for the second batch, simply for the beautiful color.
The finished batch - one for home, one for the office. :)
NOTE - The first batch of anything is usually a trial and error situation, and this was no different. The directions may have some quantity typos (too little cabbage, too much salt), but adjustments to the second batch yielded perfect results.
